Sunday's New York Times had an interesting piece on the niche market of Chinese-restaurant-menu-printing. Apparently most of the country's Chinese restaurants, instead of using local printers, choose from the same network of printers, most of which are located in NYC's Chinatown.
Particularly interesting is the article's mention of the effect on both menu price and design caused by the more recent generation of Chinese restauranteurs, who unlike their Guangdong-linked predecessors, hail from Fujian province.
I wonder if Indigo Som's research has taken her into one of these noisy printers.
